Banana Sandwiches Part 1

It's hard to believe it's been a week since I sat down to write. Life's been busy with appointments here and there, tutoring students, and doing the usual cleaning and laundry.

Anyway, summer is clipping by and before you know it the school bell will be ringing, and the 5:00 a.m. alarm will be going off...or at least mine will.

For the time being though, I'm going to enjoy every ounce of summer I can including a piece of summer past.

I love summer sandwiches and today I fixed one that mama used to make when I was growing up. Corny I know!

This particular sandwich may just be a southern thing, I don't really know, but I'm guessing it is. I remember during the summer months growing up on the farm, when we'd come in for lunch, mama would make banana sandwiches and have a big pot of peas and butter beans on the stove to go with them. Not exactly the combination I would have put together, but at the time it worked, and fed a lot of extra mouths. Nobody complained! We were just tickled to take a break and eat.

Well today I made a banana sandwich for lunch. Mind you I didn't make peas and butter beans...just had a few chips on the side.


Mama used to make them a couple of ways. The way she used to make them that I always loved the best was to take the bananas, mash them up, add mayonnaise and a little sugar, then put this sweet concoction between two slices of white bread! That's good eatin'.

The other way she'd sometimes do it, which was how the town folks did it, or at least that was the rumor, was to smear mayonnaise on both slices of bread, slice the banana and place the slices between two pieces of white bread! Much neater, but still really good.

The first way made more sandwiches, fed more..the second just looked prettier! Both delicious. Today I chose option 2, simply because of time.

I know you're wondering how in the world anybody could possibly write this much about banana sandwiches, but believe it or not, there's a part 2 that I will share tomorrow!

I've had these many times. My favorite, though, is the other banana sandwich...the one with peanut butter! I'm looking forward to part two! haha

Hey, Ginger! I ate this sandwich for the first time--without the p-nut butter!--at Elaine's (Peace for the Journey) friends' house last month! They were out of this world! These even had slices of strawberries on top! Yum!! I heart me a 'mater sandwich as well--Miracle Whip and salt!! Delish!!

I'll be the first to admit I've never had a banana sandwich, but I know I would try it! And yes I really do see how you can write that much on the subject - memories are so sweet and such a joy to share.

Sorry, I don't think I could stomach banana and mayo! But, who am I to say "yuck"?! When I was little, I ate peanut butter and pickle sandwiches, and also onion and mayo sandwiches! I couldn't eat those now, either, but I enjoyed them back then! LOL

I've never tried a banana sandwich and don't think it sounds very good, especially with mayo, but I am not a picky eater and would probably try it and love it.

My husband's dad used to eat chocolate cake with brown bean juice on top. YUCK!

I can't wait to see what part 2 is. ;)
